Well, do tell then about these 'twice baked potatoes', the descriptor says a lot, except for why bake them twice?
Twice the baking means you have twice the opportunity to add lots of yummy fatty things to the yummy starchy potatoes. Am I right, or am I right? If I'm not right, I'm right anyway!
