Black Bean Soup

Inspired by the exploits of the Evil Cake Lady.

Craving.

~1.5 cups of dry black beans, organic
Those I just cooked off for about an hour. Some of them split, which is a bummer. I never can get them just right.
But this is soup, so whatever.
Half a walla walla, 1/4 inch dice
two carrots same dice
one red potato diced
one lovely organic green pepper
Ok-all veg is organic!
maybe a tablespoon or thereabouts of some garlic I pureed a few days ago
All the veg except the cooked off beans went in the soup pot with a hunk of butter and some olive oil.
I cooked that stuff until the carrots were al dente. Then I added some chix stock, salt, pepper, fresh thyme, and cumin seeds I dry roasted. Prolly about a tsp of roasted cumin seeds. I ended up taking out about half the veg and socking it away in the freezer because this is black bean soup, not veg soup with black beans.
Black beans into the pot, with the juice of one lime,a little powdered cumin, some cayenne pepper, some corn I remembered I had in the freezer, a splash of Three Buck Chuck's Cab, and love, baby.
And a bay leaf.
And a few squares of dark chocolate, gah!
Served with sour cream, minced jalapenos, and tortilla chips.
It is fucking good!!!

I drank one beer and listened to archived This American Life: Jobs that take over your life, which has a heart wrenching story in it that I cannot get over.
